Super refined meal has the bran and germ sifted out, so it cooks paler, finer and quicker than roller meal. It is what most people reach for when there is a visitor at the table.

It also makes the smoothest bota, which is why it is the meal families buy for small children.

Because it is finer, it thickens faster than roller meal — add it more slowly and keep the pot moving, or it will lump.

Store cool, dry and sealed. Refined meal has less oil in it than roller meal, so it keeps slightly longer, but it still takes up moisture in the rainy season.
