Samp is maize with the hull removed and the kernel broken into pieces rather than milled. It cooks long and slow and comes out chewy and filling, which is exactly what it is for.
Ingredients: Dehulled, coarsely broken white maize.

Soak overnight, then simmer for an hour and a half with sugar beans, an onion and a bay leaf. Salt it near the end, or the beans stay hard.
Airtight container in a dry cupboard. Samp will take up moisture and go musty if the pack is left open.
