Roller meal is milled coarser than super refined, which means it keeps more of the maize germ and gives sadza a fuller flavour and a firmer set. It is the meal most households cook with daily, and the one that goes furthest for the money.

We bag it in 5, 10 and 20 kg sizes. The 20 kg bag is the cheapest way to buy it if you have somewhere dry to keep it; the 5 kg suits a small household or a first order.

For sadza, bring water to a rolling boil, stir in a portion of meal to make a thin porridge, let it cook out for ten minutes, then add the rest a little at a time and turn it against the side of the pot until it is stiff and glossy.

The same meal makes bota for breakfast, thinned right down and sweetened with a little sugar or peanut butter.

Keep the bag closed in a cool, dry cupboard, off the floor and away from paraffin or soap, because meal picks up smells easily.

Once opened, decant into a sealed container. In a humid month, meal left open will cake and can go weevilly within weeks.
