We take a general-purpose variety rather than a specialist one, because most kitchens want one sack that will do chips on Friday and mash on Sunday. They are brushed rather than washed — washed potatoes look better and rot faster.

For chips that stay crisp, cut them, rinse the starch off, dry them properly, and fry twice: once gently to cook through, once hot to colour.
Dark, cool and dry. Light turns them green, and green means solanine — cut it away, or throw the potato out if it has gone right through. Not the fridge: cold turns the starch to sugar.
