Cauliflower is a cold-season crop, so ours comes down from the Nyanga highlands. We buy tight, heavy heads with the jacket leaves still on, because the leaves are what keep the curd white on the journey.

Roasting rather than boiling is what makes people who dislike cauliflower change their mind. Break it into florets, oil, salt, hot oven until the edges brown.
Keep the leaves on and store the whole head in the fridge, unwashed. Wash it when you cook it — water sitting in the curd turns it brown.
