Standard granulated white sugar, refined from Zimbabwean cane. One crystal size that works for everything from a cup of tea to a Victoria sponge.

For jam and preserving, granulated works perfectly well; you simply need to stir a little longer to dissolve it than you would with a fine preserving sugar.
Sugar does not spoil, it only clumps. Keep it in a sealed jar. A hardened block breaks up again if you leave a slice of bread in the jar overnight.
